[caption id="attachment_147976" align="alignright" width="261"] Aisha Musthapha[/caption] Rosebistro.lk is a brand new cloud kitchen start-up on Instagram, founded by 17-year-old Aisha Musthapha, who, up until about a month ago, was only an Advanced Level (A/L) science student bored during lockdown.  With the help of her mom and sister, Aisha creates authentic tres leches and mahalabia – the latter of which sounded entirely alien to us until we had Rose Bistro’s version, and it has since blown our collective minds.  A recent observation we happened upon as we ate our way through every one of Colombo’s cloud kitchens is that those who tend to do better and stand out are the ones who do not spread themselves too thin; that is, those who focus on a few specialty items and do it really well.  Rose Bistro has this down pat, as they’ve chosen to focus on just two items, and offer their respective original flavours without overloading it with excessive, and frankly unnecessary, frills. They have the iconic tres leches; Aisha has opted for a very lightly vanilla flavoured tres leches topped with rose petals and a light dusting of pistachio. She shared that what really sets her product apart is the tender love and care with which she makes her food. This is also why Rose Bistro requires pre-orders as she soaks her cakes overnight, giving you a moist and rich cake.  They also have the dessert called mahalabia, which is something we’ve not actually come across anywhere in Colombo before. Aisha explained to us that mahalabia is a dessert with Middle Eastern origins, and it is essentially a milk pudding often featuring rose syrup or rose water as an ingredient.  With its subtle but also intense flavours, the mahalabia has a slight crème brûlée-like texture to it, which makes total sense, as Aisha shared with us that one of her inspirations as a young girl who got into baking was when she tried some crème brûlée in Italy, and things really haven’t been the same for her since. She also commented that her mom would make mahalabia when she was younger and she simply grew into an enthusiast.  Considering the premium nature of the desserts, they’re quite reasonably priced and they’re available in different portion sizes, starting off with one serving and going to eight-12 servings, depending on the dessert. We tried both of Rose Bistro’s specialty items – the tres leches, which nobody really seems to know how to pronounce and sort of mumbles though it, and of course the mahalabia, which also sort of sounds funny if you think about it –  but when you taste these, all of your language concerns will fly right out the window. They are both incredibly rich desserts, and Aisha does a marvellous job at creating something that is an experience.  [caption id="attachment_147977" align="alignleft" width="274"] Tres leches[/caption] The tres leches has an incredibly airy cake base, which really can make or break a tres leches and Aisha absolutely nails it; it is soaked all the way through but isn’t soggy and the cream on top is light and there’s plenty of it, which was a treat. The portion we had was Rs. 1,000 and it’s meant for two servings, this is the mini, and it’s a decently sized portion and definitely worth your dough.  As for the mahalabia, we didn’t really have any previous experiences to compare it to, however on its own, the pudding was lovely, the consistency was surprising, quite similar to a soft custard, far less dense than your average pudding. We thought it would have that overpowering condensed milk flavour but it really managed to strike a comfortable balance between sweet and milky that was its own.
