Layards Wharf: A foodie’s trip around the world

Last month saw Food Studio launch its third outlet Layards Wharf at the Havelock City Mall. With a contemporary design that takes cues from the history of the area, which used to be a sewing mill and industrial warehouse, Layards Wharf isn’t just another food court; it draws more on the concept of a food hall – a common space that instead of being serviced by multiple stand-alone brands offers a more curated and communal dining experience with a focus on diverse, high-quality cuisine and a unique atmosphere.

Food Studio Ltd. Co-Founder and CEO Nadeem Rajabdeen shared his vision for Layards Wharf, describing it as a space that transcends the conventional notion of a food court. “Layards Wharf serves the purpose of a food court but with a better-looking space,” Nadeem explained. 

“We wanted to create a dining experience that goes beyond merely serving food and drinks, incorporating captivating market-style layouts and thematic installations that honour the rich tapestry of the locale’s heritage and flavours.”

Situated on the historical grounds of the former Wellawatte Spinning and Weaving Mills, adjacent to the Wellawatte Canal (aka Layard’s Folly), a creation of Briton C.P. Layard in 1872, Havelock City embodies a legacy of cultural convergence which transformed the local area into a thriving industrial hub. 

Architect Kanishka Perera of Pollen Studios built this history into how he approached the 10,000 square foot space. The branding and visual language of the space was designed by Studio Nice One, also drawing from the history of the space and Layard’s legacy. 

The menu at Layards Wharf reflects a global culinary adventure curated by Big Studio Inc. Co-Founder and CEO Jesse Aston, who operates what is the culinary innovation arm of Food Studio Ltd.

Jesse outlined a meticulous approach to crafting the menu, which includes six distinct spaces: Patisserie and Café, Fresh and Healthy, Mediterranean, Grill, South Asian and Indian, and East Asian. 

He explained: “From classic short eats to exotic pastries, fresh salads to indulgent grills, Layards Wharf offers a gastronomic experience for every palate.” Jesse’s dedication to offering diverse and high-quality cuisine ensures there’s something for everyone.

Layards Wharf boasts six distinct culinary spaces, each offering a unique array of dishes to tantalise every palate.

  • Patisserie and Café: Where patrons can indulge in classic pastries, cakes, and croissants alongside specialty coffee and tea offerings. From traditional short eats to exotic treats from around the world, this space promises a delightful start to any dining experience.

  • Fresh and Healthy: A variety of salads, soups, and cold-pressed juices. Each dish is carefully crafted to provide a balance of flavours and nutrients, with an emphasis on fresh, locally sourced ingredients.

  • Mediterranean: Where wood-fired pizzas, artisanal pastas, and savoury mezze platters reign supreme. From classic Neapolitan-style pizzas to exotic Middle Eastern spices, the Mediterranean space promises a culinary journey through the flavours of the region.

  • The Grill: Succulent meats and seafood for every carnivore are expertly grilled to perfection. From rotisserie chicken and shawarma to gourmet burgers and hearty Sunday roasts, this section offers a mouthwatering selection of grilled delights for meat lovers.

  • South Asian: Experience the vibrant and diverse flavours of South Asia and India with a visit to this section, where authentic dishes from the region take centre stage. From aromatic curries and spicy vadas to traditional street food favourites, this space promises a culinary adventure through the rich culinary heritage of the subcontinent.

  • East Asian: The flavours of China, Japan, Korea, and Southeast Asia come together in perfect harmony – from fresh sushi and sashimi to hearty noodle dishes and flavourful rice bowls, the East Asian space offers a tantalising array of options for lovers of Asian cuisine.

What sets Layards Wharf apart is its commitment to innovation and sustainability. The venue boasts a cashless transaction system, streamlining transactions for patrons. Moreover, its environmentally-conscious packaging reflects a broader commitment to reducing environmental impact. 

Food Studio Ltd. Co-Founder and Vice Chairman Naveed Cader highlighted these unique features, noting their positive reception among patrons. “Layards Wharf caters to every need of a customer, from quick grab-and-go options to leisurely dining experiences,” Naveed remarked. “Its ambience gives it an edge over traditional food courts, creating a hybrid space that combines the convenience of a food court with the ambience of a restaurant.”
