Born and raised in the vibrant state of Jalisco, Mexico, Flores embarked on a journey that would not only redefine her own life but also introduce the true essence of Mexican cuisine to the shores of Sri Lanka.
Flores began this particular story in May 2012, when she arrived in Sri Lanka alongside her Sri Lankan husband. Sabores emerged as a beacon of authenticity and flavours, aptly named after the Spanish word for flavours. The name resonated deeply with Flores, encapsulating her desire to tantalise taste buds and enlighten individuals about the multifaceted beauty of Mexican cuisine. Flores explained how important the idea of flavours is in the dishes and how she infuses them with the essence of Mexico.
“The concept of flavours lies at the very heart of our culinary journey at Sabores. Each dish we craft is a harmonious symphony of tastes that evoke the rich tapestry of Mexico’s culinary heritage. By infusing our dishes with the essence of Mexico, we aim to transport our patrons to the streets of Jalisco and the markets of Mexico City.” From the vibrant spices to the fresh ingredients, every element plays a pivotal role in creating an authentic experience that encapsulates the soul of Mexican cuisine. Unwavering determination
However, like any journey of resilience, Sabores faced its share of setbacks. The economic crisis that cast its shadow over the country forced the cloud kitchen to temporarily close its doors. But in the face of adversity, Flores and her team demonstrated unwavering determination. Today, as Sabores reopens its doors, it stands as a beacon of hope and a testament to the strength that emerges from overcoming challenges.
“We went through some tough times, especially due to the economic crisis,” Flores acknowledged, her tone reflecting the trials they endured. “But we believe in the love for authentic flavours, and we’re hopeful that as the days go on, business will get better.” Her optimism shines through, a testament to the resilience that has brought Sabores back from the brink and onto the path of progress once more.
Back in 2012, stepping into a new land brimming with unfamiliar cultures and cuisines, she was met with an unexpected challenge. As she fondly recalled: “I was totally clueless about the lack of my known products and the difference in cuisines.” She had assumed that the ingredients and flavours she cherished from her homeland would be easily accessible, only to discover a dearth of Mexican cooking essentials.
Staying true to Mexican flavours
Her initial hopes of finding solace in local Mexican restaurants were also dashed, as she observed their transient existence within the country’s culinary landscape. “The few times something close to Mexican food restaurants opened up, they would close within a year!” she lamented. Moreover, Flores was disheartened by the common misconception that equated authentic Mexican cuisine with Tex-Mex or fast-food chains like Taco Bell.
The journey of Sabores took root in the midst of these challenges. One of the biggest challenges was overcoming misconceptions about Mexican cuisine. “People often equated Mexican food with Tex-Mex or fast food, which was disheartening,” Flores noted. “I realised that education was an essential part of my journey – teaching people about the diversity and complexity of authentic Mexican dishes.” Fuelled by her determination to showcase the genuine taste of Mexican food, Flores embarked on an entrepreneurial venture that would soon capture the hearts and palates of Sri Lankans. “I decided that there was no better way than to show Lankans the real taste of Mexican food through my small home business,” she affirmed.
She also shared her methods of balancing and preserving the authenticity of Mexican cuisine while also catering to local tastes and preferences. “Striking the right balance between preserving authenticity and catering to local preferences is both an art and a science. We believe in honouring the essence of Mexican cuisine while remaining sensitive to the local palate. We maintain the core flavours and techniques that define our dishes, infusing them with a touch of creativity that resonates with local tastes.” Flores added that they’ve also engaged with their patrons to understand their preferences, allowing them to offer variations that retain the Mexican soul while adapting to local preferences. “It’s a delicate dance that requires continuous exploration and dialogue, all while staying true to our commitment to authenticity.”
Loyal following
The response to Sabores has been beyond Flores’ wildest expectations. The Sri Lankan community embraced the flavours of Mexico with open arms, a revelation that filled Flores with both joy and gratitude. “I never expected people to like the food so much!” she exclaimed, her voice carrying the echoes of her initial surprise and delight.
We asked her what sets their menu apart from other Mexican food options, and if there were specific signature dishes that patrons particularly love. “What truly distinguishes our menu is its commitment to authenticity. We’ve strived to create a culinary haven where patrons can embark on an exploration of genuine Mexican flavours, unencumbered by preconceived notions. Our signature dishes like beef tacos and cheese quesadillas have garnered a loyal following. Our beef tacos capture the essence of our roots, blending traditional ingredients in a way that elevates the dish beyond the ordinary. Our cheese quesadillas pay homage to the vibrant street food culture of Mexico, where every bite tells a story. It’s the unique combination of time-honoured recipes, fresh ingredients, and a touch of innovation that sets our menu apart, resonating with those who seek an authentic, unforgettable culinary experience.”

Flores also shared advice she would give to aspiring entrepreneurs looking to bring authentic, lesser-known cuisines to a new audience, stating: “For those embarking on a journey to introduce lesser-known cuisines, authenticity should be your guiding light. Immerse yourself in the culture, traditions, and flavours of the cuisine you’re passionate about. The heart of your venture should beat to the rhythm of the culinary heritage you’re bringing to the table.”
She further noted that education is paramount and emphasised the importance of enlightening one’s patrons about the origins, stories, and techniques that make one’s cuisine special. “Embrace challenges as opportunities for growth and innovation. And above all, create a space where patrons don’t just eat, but they experience the culture and history behind each dish.”
