Barely one month into having launched the dessert shop, Founder, and baker behind the scenes, Radhinka Peiris is already attracting an overwhelming amount of attention for these interesting new desserts. Radhinka, who is a teacher by profession, has always been a foodie herself maintaining a long-time, passionate love affair with food. She shared with us that she always loved to bake, but she found that unlike the numerous bakers with their cloud kitchens online, showcasing their flashy desserts, she wasn’t all that artistically inclined, and so she had to look for a dessert that wouldn’t suffer from not having a glitzy outer coating.   She shared that having always been a fan of baked cheesecake over the no-bake kind (we agree, it is far superior), when lockdown came, she decided to try her hand at something a little different, and as she got to baking, she shipped off her product to her neighbours and friends, who all soon fell in love. She shared that what started off as a pure passion project just to feed her loved ones, instantly grew into an overnight business venture when her friends insisted on not allowing her to continue baking them quality desserts for free. With everything just falling in place, trusting in her palate as the go-to food connoisseur in her social circles, Radhinka got to baking for her newly launched cloud kitchen dessert concept – Burnt Basque  Cheesecake by Rads. She shared that not having any prior exposure to the food industry did pose some challenges, as she faced what she expected were typical start-up roadblocks: Where do you find reliable sources to deliver your ingredients, and aesthetic packaging that is also cost-effective? In an environment where she couldn’t simply hit the streets in search of these things, she said things weren’t as smooth sailing as one would’ve liked. However, she has managed to have the shop up and running. And when the orders come rolling in, it is a one-woman show, with Radhinka taking care of every step of the process, from the bake to the assembly of the boxes to be sent out. She did share that since she’s slightly obsessive compulsive about these things, the controlled environment is kind of unavoidable. Radhinka’s Burnt Basque Cheesecake is once again a fantastic example of cloud kitchens picking one perfect item and doing it really well. Businesses that focus on just a few items which they do incredibly well have really made their mark in the market, able to stand out from the endless dribble of home bakers popping up all over the internet. Burnt Basque Cheesecake by Rads was the first-ever burnt cheesecake we’ve ever tried, and we’ve continued to try it several times more after that first initial bite, because it is just that good. The dessert really breaks all the rules when it comes to what you’d expect from a cheesecake; a deliberately burnt outer casing adds texture and a beautiful earthy flavour to the airy light middle, and whether you’re having it warm fresh from the delivery or a couple of days after having it in the freezer, it really doesn’t matter, because it is delicious either way. You can sort of eat it like you would a cupcake, only it’s so much more interesting than a basic cupcake and you’re going to want to eat a lot more than just a couple.
